I'm back in Europe. It's cold grip. Being heard a boy in San Diego with limited intelligence, I have a bag of Hawaiian shirts and Sperry Top Siders with me. There is snow on the ground. It snowed a few times. There's ice on all the sidewalks. It is approximately 25 to 30 degrees during the day and about 15 to 20 degrees at night. The first thing I did when I arrived was to buy a pair of rubber boots in the snow with a sort of off-road aggressive tread on the bottom. They do not get wet and I do not slip on ice. Then I bought a pair of heavy socks and a wool hat that covers my ears.It makes perfect but I'm still cold Butt ... ... Now I know how feels a vineyard in winter, when it is dormant. To consider all these vines dormant shivering cold in the snow and ice .... To imagine what incredible plant God created to be able to withstand ice and snow of winter and the summer heat ... .. Now I know why I like the wines of France better than the new world. Because the soil of winter. Because the vines reflect the soil and create a moment in time that is bottled for the pleasure that the future that reflects the terroir. California, Australia, RSA, Chile, etc. really do not get this winter ice and snow. They have no problems obtaining the bailey ripe almost every year. But because of that, they also lose some of the essence that is inherent to all French varietals that are grown in the new world. They also lose their acid evaporation heat of the summer sun. This acid is a key component of a wine of balance. It is a key component of a wine that will age for decades (the acid helps to kill bacteria impairment). The cold keeps the pH pH (low acid low medium high). This is one major reason that the French wine for decades and age are collected on a large scale while the new wine world despite the "Bob" scores are not. A good Burgundy, Chateauneuf du Pape, Bordeaux is not ready to be consumed during 10 to 15 years or more. Often much more. It must be old. This is why Europeans have many wine cellars. The wine they buy today is stored for at least 10 years before drinking. In the new world more wine is bought for immediate consumption. The wines are produced to be consumed immediately. In France, you buy a moment of time, put in a bottle to be stored and softened for future generations to enjoy. This is a big difference and it is very key. The other day, after class some of my comrades of P21 and I went to the wine shop with a classmate in the Latin quarter by the Sorbonne. The name of his shop is the "Coup de Grace". It was found that the growth of 30 in St Estephe near Chateau Cos D'Estournel. He was a 1997. I asked him why he chose this wine.He said he was very close to the family that owns and which was the best man in one of their weddings ... ... ... I think this says it all....
